· 210g unsalted butter
· 335g caster sugar
· 120g cocoa powder (I used Cadburys Bournville)
· 1/4 teaspoon + 1/8 teaspoon salt
· 3/4 teaspoon pure vanilla extract
· 3 cold large eggs
· 105g all-purpose flour
· 3/4 Tin of Nestle Top'N'Fill Caramel (or you can make your own by simmering unopened cans of condensed milk in a full pan of water for 2 or so hours - important to make sure to keep the water topped up or they can explode!)
Preheat oven to 160°C/325°F. Line a baking pan with grease-proof parchment paper. (I used a 32cmx25cm pan)
Melt the butter in a heatproof bowl placed on top of a simmering pot of water.
Once melted add the sugar and salt and stir until combined. Then stir in the cocoa powder and remove bowl from heat when the mixture is hot to the touch. Let the mixture cool for a couple of minute before stirring in the vanilla. Then beat in one egg at a time, fully incorporating each one before the next is added then continue to beat with a wooden spoon for an extra minute.
